“This is one of my go to quick lunches or dinner when I have very little energy or have some leftover chicken to use up. In a pinch, you can always use rotisserie chicken meat. The amounts listed here make for a macro friendly meal, but use whatever ratios of ingredients you want.”

FAQ

What kind of cheese should I use? And why not make a cheese sauce?

Use any mild, melting cheese that you like the flavor of. Cheddar, Monterrey jack, quesadilla, or low-moisture mozzarella are all great options. This recipe was designed to come together as quickly as possible and reduce the calories, thus the grated cheese instead of a nacho sauce. These eat more like a taco salad than ballpark nachos.

Any other substitute recommendations?

You can use any cooked protein you want. For a vegetarian option, cooked and drained beans are amazing in this. Sub out the sour cream for nonfat Greek yogurt for even higher protein topping.
