
Teriyaki & Snap Pea Noodles
A teriyaki sauce noodle dish.
Ingredients
Teriyaki Sauce
- Cooking oila drizzle
- Garlic, minced2 cloves
- Fresh ginger, mincedsmall knob
- Soy Sauce1 part30 g
- Mirin1 part30 g
- Sake1 part30 g
- Sugara sprinkle
Starch slurry
- Cornstarch1 parta spoonful
- Water2 parts2 spoonfuls
Stir fry components
- Ramen Noodles2 servings
- Braised beef~225 g1/2 lb
- Snow peas, halved~113 g1/4 lb
- Salta sprinkle
- Sesame Seeds
Method
Step 1: Make the sauce
Set a pot over medium heat and add a drizzle of oil. Add the ginger garlic paste and for about 1 minute to infuse the flavors into the oil.
After a minute, pour in the soy sauce, mirin, and sake mixture, and bring it to a . Let it cook and for about 6 minutes.
While the sauce is reducing, make the by mixing a spoonful of cornstarch into a spoonful of cold water.
Add a splash of slurry to the sauce and bring it back to a simmer. Check the thickness and repeat until you've reached your desired consistency.
Lastly, taste the sauce and add a spoonful of sugar if needed.
Step 2: Stir-fry the peas & the beef
Place a wok or large pan over high heat and add a drizzle of neutral oil to the pan.
Add the snow peas along with a sprinkle of salt and for about 1 minute. Add in the beef, which is already fully cooked, it just needs to be heated and mixed with the peas.
If using a different protein, stir fry until well browned and mostly cooked through.
& drain the noodles according to package directions.
Step 3: Combine noodles & sauce
Add the cooked and drained noodles to the mix, and them into the mix.
Start adding drizzles of teriyaki sauce, tossing and stir-frying until the sauce coats everything, or until you've reached your desired sauce level.
You might have some extra sauce left over.
Serve warm, garnished with a sprinkle of black or white sesame seeds.

FAQ
What if I don't have sake?
Sake is a rice wine that brings acidity and to the dish. If you have a dry white wine or dry sherry around, feel free to use those. If you don't have either, just use extra mirin, but don't add the sugar (mirin is rice wine).
Do I need to make braised beef for this?
Use whatever protein you have around. While any shredded or pre-cooked meat works great here, you could stir-fry thinly sliced meat right in step 2 of this recipe.
Do I have to use ramen noodles?
Feel free to choose any that you like. To make this higher protein instead of carb-heavy, try the ramen noodles I use all the time from Vite Ramen. This recipe would also work great with soba or egg noodles (like lo mein/chow mein style noodles).
