Ingredients

Base components

  • Lebanese style pita
    1
  • Low-moisture mozzarella, shredded
    75 g
  • Roasted red pepper hummus
    ~ 60 g

Grilled chicken topping

  • Chicken Thighs, boneless, skinless
    1
  • Mayonnaise
    7 g
  • Salt
    a sprinkle
  • Garlic Powder
    a sprinkle
  • Lemon zest
    a sprinkle
  • Fresh oregano
    a sprinkle
  • Red Pepper Flakes
    a sprinkle

Fresh toppings

  • Lettuce, shredded
  • Tomatoes, diced
  • Pickled onions

Method

Step 1: Preheat the oven & pan

Preheat the oven to 475°F/246°C.

Go ahead and place an empty sheet pan in the oven.

  • The pita crust will go on it and having it hot will make the crust crisp up a bit faster.

Step 2: Season & sear the chicken

Set a cast iron over medium high heat.

Then, season the chicken: set the boneless chicken thigh on a plate and add a sprinkle of salt on both sides to ensure even coverage. Add the mayo and seasonings to the chicken and rub it all over.

Add the chicken to the hot pan and let it brown up on each side. Sear it until it reaches 160°F/71°C. Let it rest a few minutes before slicing it up.

Gather any remaining components and get ready to assemble.

Step 3: Assemble & bake the ‘pizza’

Place the pita down and spread the hummus over it evenly. Next, add the cheese and chicken, or whatever cooked toppings you want.

  • Pull the hot sheet pan from the oven and place the pita on top. Slide it into the oven to for 5 or so minutes until the cheese is melted.

Pull the pizza out and add the lettuce, tomato, and pickled onion or whatever else you like. Get creative and have fun with it!

Slice it up & enjoy.

“This pizza, or flatbread, is a great way to use up whatever you have in the fridge. It has five main components: the pita, sauce base, cheese, cooked toppings and fresh toppings. Here’s one of my favorite renditions.”

FAQ

Can I use regular pita & hummus?

I recommend using a Lebanese style pita because they are thinner. The thinner base allows room for more toppings and are less calories. If you can’t find Lebanese style look for lavash, roti, or even a tortilla could work here. Use whatever flavored hummus you prefer. Regular hummus definitely works too.

What are other types of sauce to use?

You could go with classic tomato sauce, pesto, barbecue, hot sauce, ranch, or salsa.

What other types of meat or veggies are good?

Any cooked veggies, meats like chicken or steak, seafood or random leftovers are great. It’s meant to be highly customize-able. One day for lunch I used leftover BBQ chicken, red sauce, and cheese. Have some fun with it!
