Leftover Focaccia "Pizza"

Ingredients

Herb buter

  • Butter
    15 ga spoonful
  • Dried oregano
    a sprinkle
  • Garlic Powder
    a sprinkle
  • Red Pepper Flakes
    a sprinkle

'Pizza' components

  • Focaccia, halved
    1 square
  • Marinara
    a few spoonfuls
  • Low-moisture mozzarella, grated
    a handful
  • Parmesan, grated
    a sprinkle
  • Fresh basil, thinly sliced
    a sprinkle

Method

Step 1: Prep the bread & butter

To prep the bread, cut the square in half like a 'bun' into 2 thin pieces. Add the butter, oregano, garlic powder, and red pepper flake to a bowl.

Microwave until melted and mix together.

  • Rub the butter mixture onto the cut side of both pieces of focaccia.

Step 2: Sauce & sear the focaccia

Heat a pan over medium-high heat. Place the focaccia butter side down to crisp for 30-60 seconds.

Flip the focaccia over and add a thin layer of the marinara sauce.

  • Flip the focaccia over and let the sauce to develop deep flavor notes.

Flip the focaccia back over, sauce side up now, and turn off the heat.

Turn on the oven broiler.

Step 3: Add toppings & broil the slice

Add the mozzarella, grated parm, and any other toppings you would like.

Place the focaccia pizza under the broiler until the cheese is melted and bubbly.

FAQ

What kind of marinara or tomato sauce should I use?

Any marinara will work, but we recommend making this three-ingredient all-purpose tomato sauce. Extra can be frozen and used for recipes just like this. Of course, any jarred marinara will work. In a pinch, straight-up canned San Marzano tomatoes will work. Just blend them to your desired consistency and season with some salt.
