
Ingredients
Ground lamb
- Ground lamb450 g1 lb
- Salt5 g1%
- Cumin3 ga sprinkle
- Aleppo pepper3 ga sprinkle
Pita & garnishes
- Pita Bread2-3
- Hummus~30 g per pita
- Feta~15 g per pita
- Pickled onions
- Tomatoes, sliced
- Lettuce, shredded
Method
Step 1: Sear the lamb
Preheat a pan or griddle over medium-high heat.
Once hot, press the ground lamb into the pan into an even layer, and allow to undisturbed for 4-5 minutes or until that side has developed deep browning.
Season with salt, then use a spatula or potato masher to scrape and break up the lamb into a finer texture as it continues cooking through.
Step 2: Add the spices & finish the lamb
Once the lamb is mostly cooked through, add the cumin and aleppo pepper to the pan.
Stir well to coat the lamb evenly in the spices and continue cooking for another 2-3 minutes to the spices and finish cooking the meat.
Taste and adjust seasoning with more salt or spices if needed. Set aside.
Step 3: Assemble & serve
Slice and open up the pita pockets (warming them up, if necessary).
Spread a layer of hummus to both sides of the interior of each pita pocket (about 30 g of hummus per pita), then fill with the seasoned lamb (about 1/3 or 6 oz, depending on your pita size).
Garnish with pickled or fresh vegetables of choice, and crumbled feta cheese (about 15 g per pita).
Optionally finish with an extra sprinkle of Aleppo pepper.

How spicy is Aleppo pepper? Can I substitute it?
Aleppo pepper has a slower-building profile than red pepper flakes with a more flavorful, fruitier aroma. You could just use standard pepper flakes, swap in black pepper, or omit entirely for a mild version.
