  • Toasted sesame oil

Method

Step 1: Marinate

Blend all marinade components until smooth. Taste and adjust as needed.

  • The marinade is a starting point. It should taste really strong in every area (saltiness, sourness, sweetness, etc) to impart flavor to the meat.

Pour the marinade over the short ribs in a freezer bag or bowl and massage it into the meat. Seal or cover and for a few hours or up to two days in advance.

Step 2: Grill or sear the meat

Heat a pan or grill over high heat. Add a drizzle of oil before cooking.

Wipe off excess marinade, then or grill short ribs until on each side and mostly cooked through.

Step 3: Serve

Garnish with sesame seeds and scallions, and serve with a side of choice. Enjoy immediately while the grilled short ribs are still warm for best texture.

FAQ

What if I can’t find cross-cut short ribs?

If you can’t find them on the shelves, ask your butcher for flanken-cut beef short ribs. These are the flat. thin short ribs, not the thick square braising short ribs (English cut).

What is up with the Asian pear in the marinade?

Fruits like Asian pear, apples, kiwis, and pineapples are often used in marinades because they contain enzymes that can help tenderize the meat during the process. They also add some and flavor. You can use any of the fruits listed above as substitutes, or omit them entirely. Asian pear is traditionally blended into this style of marinade.

Is there a good substitute for mirin?

Mirin adds to the profile but also brings and a light to the dish. You could also substitute it for orange juice or pineapple juice, but omit the sugar. These juices will bring sweetness but also some acidity and tenderizing properties.
