High Protein Harissa Spiced Wrap

Ingredients

Seasoned meat filling

  • Ground meat
    450 g1 lb
  • Harissa paste
    50 g2-3 spoonfuls
  • Salt
    4 g1%
  • Cumin seeds
    a sprinkle

Remaining wrap components

  • Lavash bread
    3-4
  • Pickled cabbage
    to taste
  • Yogurt
    to taste
  • Dried dill
    to taste
  • Black Pepper
    to taste

Method

Step 1: Sear & season the ground meat

Set a pan over high heat, then add the ground meat and press it into the surface of the pan. Sprinkle the salt and cumin seeds on top of the beef to begin seasoning it.

Continue searing and breaking up the beef until it is cooked through, has some nice , and has been broken down to your desired texture.

Step 2: Add the harissa paste & finish the meat

Turn the heat to low and add in a few heaping spoonfuls of the harissa paste. Use the moisture from the harissa to the bottom of the pan.

Mix until the meat is evenly coated and saucy. Turn off the heat, taste, and adjust with more salt, cumin, or harissa paste as needed.

Step 3: Assemble the wraps & serve

To assemble a wrap, set a lavash bread down and spread a spoonful of yogurt on one third of the bread. Sprinkle the yogurt with dill and black pepper to season (think of this as a “yogurt sauce”).

Add a layer of pickled cabbage, and then a portion of ground meat, all in a neat line.

  • I did ~1/3 of the meat per wrap.

Tightly roll up the lavash bread into a wrap. Optionally cut in half and/or seal with foil or parchment paper for eating or storage (these are great for making ahead).

Repeat with remaining wraps and enjoy.

Where can I get pickled cabbage? Any substitutes?

I made cabbage with the exact same recipe I use to make pickled onions. It brings and acidity to this recipe, so any pickle can be used to add a , bite.

What are lavash breads? Any substitutes?

Lavash breads are a thin, Middle Eastern flatbread that can be found in lower-calorie options. Any wrap or flatbread, even a flour tortilla, will work!

I don’t do well with spicy foods, should I still use the harissa paste?

Harissa has a mild-medium kick. You can use less, or season the meat however you want. What is important is that you make a flavorful ground meat mix. Experiment with your favorite spice mixes or other chile pastes (or even salsas) to change the profile.
