High Protein Gochujang Noodles

Simple noodles for a weeknight dinner.

Ingredients

Noodles & egg

  • Vite ramen
    1 pack
  • Eggs
    1
  • Cooking oil
    a drizzle

Gochujang sauce

  • Gochujang
    10 g1 part
  • Kewpie mayo
    5 g1/2 part
  • Chinese Black Vinegar
    5 g1/2 part

For serving

  • Scallions, thinly sliced
  • Black sesame seeds

Method

Step 1: Boil the noodles

the noodles according to package directions, and drain.

Step 2: Mix the sauce & fry an egg

In a small bowl, mix together gochujang, mayo, and vinegar until smooth. Taste and adjust if needed.

Step 3: Assemble & serve

In the noodle pot, mix together the drained noodles and the noodle sauce.

Add the noodles to a plate, and top it with a fried egg, sliced scallions, and black sesame seeds. Enjoy.

FAQ

What if I don’t have gochujang?

If you don’t have gochujang, try Sriracha and add a tsp of sugar. You can also use a different vinegar in a pinch.

Are there other ingredients I can add to this?

Up the by adding ground beef, tofu, or chicken to the dish. You could also saute any greens to add some bulk to the dish.

Do I have to use Vite ramen?

They are a good source of protein, but no you do not. Feel free to use whatever ramen noodles you have on hand.
