Method
Step 1: Make the quick chili
Add the can of enchilada sauce to a saucepan and set to medium heat. Taste and adjust the sauce with garlic powder, smoked paprika, and any other seasonings you see fit.
Bring to a and add the braised beef. Let that warm through and until the meat is fully incorporated and the chili mixture has reached your desired consistency. Taste and adjust as needed.
Step 2: Assemble the Frito pies
In serving bowls, layer in a portion of Fritos and grated cheese. Top with the warmed chili braised meat, then garnish with diced onion, cilantro, sour cream, and hot sauce as desired.
Alternatively, serve the chili and garnishes right in the Frito bag.
Enjoy warm.

What if I don’t have leftover braised meat around?
No problem. Just cook up some ground beef, and then mix that in with the sauce. Alternatively, you could use a canned or homemade chili (which is traditional in Frito pie). For this recipe I used leftover smoked chuck roast which I shredded and froze for use in quick meals like this.
What kind of enchilada sauce should I use?
Any red canned enchilada sauce is a quick way to turn meat into a chili-like mixture. I tasted the one I had and adjusted it to taste with extra smoked paprika and garlic powder for complexity. If you want to make your own red chili sauce from scratch, use the one from this enchilada recipe.
Which Frito product should I use? Any substitutes?
The standard corn Frito chips are classic, but feel free to experiment with the other flavors and shapes. While you can plate this dish up, it’s also commonly served right in the Frito bag! If you don’t have access to Fritos, you could totally use potato chips or even tortilla chips, which would be reminiscent of chilaquiles.
