Ingredients

Meat filling

  • Ground beef, or lamb
    300 g~2/3 lb
  • Sour Cream, or yogurt
    2 spoonfuls
  • Onions, finely minced
    1
  • Parsley, finely minced
    a handful
  • Salt
    to taste
  • Black Pepper
    to taste
  • Paprika
    a sprinkle
  • Cumin
    a sprinkle

For serving

  • Parsley, chopped
  • Onions, thinly slied
  • Tomatoes, thinly sliced
  • Lemons, wedges

Method

Step 1: Preheat the oven

Preheat an oven to your highest temp (like 500°F/250°C) with a pizza steel/stone in the top rack.

If you don’t have a baking stone/steel, a baking or cookie sheet also works!

Step 2: Mix the meat

Meanwhile, mix all meat spread components until the meat is tacky. You can do this in a food processor, or by hand if you finely mince the herbs/onions.

Cook a tiny spoonful of it in the microwave to check seasoning, and add ingredients if needed.

Step 3: Spread the meat onto the bread

Spread a very thin layer of the meat mixture onto a flatbread. Repeat with remaining flatbreads until you’ve run out of meat.

Step 4: Broil the lahmacun & serve warm

Switch the oven to the broiler function on high.

Slide a prepped flatbread onto the stone and from above until the meat mixture is browned and fully cooked. Repeat with remaining portions.

Serve warm with garnishes on the side. To eat: roll up an individual lahmacun with toppings of choice. Enjoy.

FAQ

What if I don’t have a pizza stone?

If you don’t have a pizza stone, still set the oven to the highest temp possible with a sheet pan inverted on the lowest rack. Once the oven is heated, you can place the flatbread on top of the sheet pan and let it cook. The hot pan will help the crust get crispier.

What kind of flatbreads work for this?

Any flat, thin breads are preferred, like Turkish/Armenian breads, lavash, or Lebanese style pitas. You could also use roti style flatbreads. If you’re making a homemade flatbread, you can roll out the dough and bake the meat directly on top, cooking it in one go. This is the traditional way of preparing this dish.
