
Homemade Chorizo Choripan Sandwich
The classic Argentinian street sandwich.
Ingredients
Homemade chorizo
- Ground pork450 g1 lb
- Salt6 g1.5%
- Paprikaa spoonful
- Dried oreganoa spoonful
- Black Peppera spoonful
- Nutmega sprinkle
- Garlic, minced5-8 cloves
Chimichurri
- Parsley, minced1 bunch
- Olive Oil75 g
- Vinegar25 g
- Garlic, minced2 cloves
- Red Pepper Flakesa sprinkle
- Saltto taste
Bread
- Hoagie rolls4-6
Method
Step 1: Mix the chorizo
In a large bowl, mix together all chorizo ingredients until well combined. Set aside for cooking.
If you won’t be making multiple portion now and want to save extra for later, flatten the sausage mix into ziplock freezer bags. Before freezing, press perforation lines into the flattened sausage so you can break off smaller amounts at a time.
You can cook a serving of sausage straight from frozen.
If you cook all of the meat right now, you should have enough for 4-6 sandwiches.
Step 2: Make the chimichurri
Add parsley and garlic to a bowl, then add the olive oil and vinegar, which should barely submerge the mixture. If you want a looser consistency, add a bit more oil and vinegar. Sprinkle in the red pepper flakes and salt, then taste and adjust the seasoning as needed.
This should make enough for 4-6 sandwiches.
Step 3: Sear the chorizo
Preheat a pan or griddle over high heat. Add a serving size of the chorizo to a pan, ideally shaped into the rough size of your sandwich bread.
Allow the chorizo to on this side until well and lightly .
Flip the chorizo patty and continue searing until the meat is cooked through. Repeat with extra patties as needed.
Step 4: Assemble the sandwich
To assemble a sandwich, cut open your bread roll and slather the insides with chimichurri. Add the cooked chorizo patty, top with an extra dollop of chimichurri and close.
Optionally toast the bread or wrap with foil to contain during eating.
Repeat if making more sandwiches. Enjoy.

You’ll often find choripan served with whole-seared sausage links, but this works great with loose ground chorizo too. I made my own chorizo but you could use store-bought for an even quicker recipe.”

What kind of bread works well for this sandwich?
This sandwich works amazing with hoagie rolls, French bread, softer baguettes, ciabatta. Great use case for stale bread since the juices from the chimichurri and sausage soak into the bread.
Can I make the chimichurri differently?
Absolutely - chimichurri is a flexible framework of herbs, fat, acid, and spices.
Does Mexican chorizo work for this sandwich?
Mexican chorizo is spiced and more heavily than South American chorizo styles, but it will definitely work for this sandwich.
Note: Spanish chorizo is a cured sausage product (like salami or pepperoni), so that won’t work.
