Ingredients

Kofta beef

  • 93/7 ground beef

  • Onions

Yellow rice

  • Basmati Rice

  • Water

  • Chicken bouillon powder

Dill yogurt sauce

  • Greek Yogurt
    150 g3 parts
  • Mayonnaise

  • Dried dill

Method

Step 1: Cook the yellow rice

Add the rice, water, bouillon powder, turmeric, whole clove, and Aleppo pepper to a rice cooker or saucepan. Stir to combine.

Fluff with a fork before serving.

Step 2: Brown the beef

Meanwhile, heat a large skillet over medium-high heat until hot. Add the ground beef, salt, onion, parsley, and spices.

Traditional kofta is usually formed around skewers or into meatballs before being grilled. This recipe keeps the same warm spice profile but cooks the meat as crumbles, making it much faster and easier for weeknight dinners and meal prep.

Do I need all of these spices?

Use what you have! For the rice, bouillon is the primary seasoning (provides and ) while the turmeric gives it a golden . The clove and Aleppo pepper could be omitted or substituted.

The meat mixture is reminiscent of kofta skewers with cumin, coriander, parsley, and onion, but you could use other herbs, alliums, or warming spices.
